Frans’s
Dutch apple
cake
- 200
gr butter
- 200
gr self raising
flour
- 200
gr sugar
- 2
eggs
- 2-3
spoons or splahes of milk
- 50
gr raisins or
sultanas
- 4
or 5 apples peeled
and cut into segments of about 5 mm wide(1/4 inch)
Preferably Bramley's
- Cinnamon
sugar: 5
table spoons of sugar with 2 tea spoons of cinnamon
- Pre
heat oven at 180C
- Put
sugar and flour
+eggs in a bowl, and mix. Add butter and the milk. Mix well at highest
setting.
Add raisins/sultanas.
- Butter
bottom and side
of 26cm cake tin, add mixture and press in apple segments vertically
and very
close together, till whole surface is covered. (I tend to put them
radial,
first the most outer ring, and then working towards the centre)
- Sprinkle
cinnamon
sugar over the top.
- Put
in over for 40
min. Spike with skewer, cake is ready if spike comes out dry.
- If
top is nice an
brown, cover it with alu foil to prevent burning
(usually not required for fan
assisted ovens...)
